The pumpkin spice latte might reign supreme in the kingdom of fall flavors, but we can't forget it's roots. The humble pumpkin pie. Arguably the best part of Thanksgiving dinner, extra special as it only makes an appearance one month a year. Pumpkin has taken over menus far and wide as the first leaves fall (not in Florida, but go with me). Crop Juice took this sweet and slightly savory treat and gave it a healthy makeover: the Pecan Pumpkin Pie Bowl.
The "crust" is swapped for gluten free granola while the normally cream laden filling is vegan-ized. Vanilla almond mylk, pumpkin puree, pecan cashew butter, banana, fresh ginger root and pumpkin pie spice are blended into a consistency somewhere between a smoothie and ice-cream.
Topped with maple ginger pumpkin seeds, pecans, more banana (cause health) and finally a coconut nectar and pecan cashew butter maple syrup drizzle this breakfast bowl will give you plenty to be thankful for.
Crop Juice Gulf Gate (moving soon to Stickney Point Road) is open Monday through Friday from 8am to 6pm and Saturdays from 8am to 4pm. They are currently closed on Sundays.
